Lisa A. Lundy is the author of The Super Allergy Girl™ Allergy & Celiac Cookbook – From A Mother Who Knows™. Her gluten-free, dairy-free and allergen-free cookbook, which is designed to help people with a variety of health issues is based on years of practical experience, baking and culinary expertise and the motivation to have fantastic foods for her own three food-allergy children.
Due to her premature birth, severe allergies, and other factors, the then predictable and heartbreaking future of Lisa’s third child, Anne, was to become unable to walk or talk, to become brain damaged, to have numerous seizures, to need a feeding tube and to have frequent hospitalizations. Lisa’s daughter has avoided all of these serious health issues and is the picture of a normal looking, chatty little girl due to the interventions Lisa and her husband have used. It has taken more than five years and has come at a cost of over $125,000 in uncovered medical bills to move Anne from having no immune system and being severely malnourished (due to a malabsorption problem) to a child whose future looks bright.
Because Lisa and her family had and continue to have health insurance, it came as a shock to her that an HMO could get away with denying life-saving medical treatments to a 20 month-old child who literally could not digest food, while offering no option for other treatments whatsoever. Due to her experiences, Lisa is passionate about helping others by providing inspiration, information, hope and a dose of fabulous tasting recipes.
When Lisa discovered that the gluten-free commercially made breads tasted like cardboard, and she couldn’t purchase non-dairy ice cream that was also free of other allergens, Lisa looked for answers and recipes. While there were many gluten-free cookbooks on the market, she could not find one that was free of dairy, eggs, peanuts, tree-nuts and other allergens and which produced foods that had a great taste, the right appearance and a good texture. Over time she created her own cookbook with her family recipes as well as recipes invented with the help of her loving husband and three children.
Prior to publishing the cookbook in 2007, Lisa taught gluten-free, dairy-free and allergen-free baking classes in the Western New York (Buffalo-Niagara) community. She has also consulted with bakeries and restaurants in New York City, Western New York State and New Jersey. She has been involved with the Western New York celiac and autism communities for many years.
Lisa is a dynamic public speaker credentialed by Toastmasters International to the Advanced Toastmaster Silver Award level and the Competent Leader level. She has been on the news in New York City (Fox 5) and a featured guest internationally on the Korean News station (MBC). She recently completed taping a “Living Well with Montel” show with Montel Williams. She speaks as a motivational and educational speaker to large and medium-sized groups.
